Basic Meatloaf

Note: Modifications to improve Luke's family's recipe


Ingredients:

1½ lb Ground Beef (85/15 or 80/20)

1½ teaspoon Salt

3 tablespoons dried Onion Flakes

1 Egg

2 slice of Bread

¼ cup Milk

3 tablespoons Worcestershire Sauce

⅓ cup Stone Ground Mustard

¾ cup Ketchup

1½ cup Rolled Oats


Directions:

Preheat oven to 325°F (165°C)


Cut the bread until it's minced or tear into large crumbs, add to a small bowl


Add the milk and stir to saturate the bread


Add all remaining ingredients to a large mixing bowl


Add soaked bread mixture to the large mixing bowl


Mix until everything is thoroughly mixed together


Add mixture to a loaf pan and shape into a loaf


Bake for about an hour


After removing from oven, rest for 15 minutes to help prevent falling apart when serving



Final Notes:


Once we're completely happy with the meatloaf it might be fun to come up with some type of glaze to top it with.

Note: This is Luke's family's recipe, and it just so happens to be very similar to my family's.


Ingredients:

1lb Ground Beef (85/15 or 80/20)

1 teaspoon Salt

2 tablespoons dried Onion Flakes

1 Egg

1 slice of Bread

Milk

2 tablespoons Worcestershire Sauce

½ cup Ketchup

1 cup Rolled Oats


Directions:

Preheat oven to 325°F (165°C)


In a small bowl, tear up the slice of bread into rough cubes


Add enough milk to saturate the bread


Add all remaining ingredients to a large mixing bowl


Add soaked bread to the mixing bowl, but discard any excess milk

[this recipe already has had excess liquid when fully cooked, it shouldn't need the extra milk]


Mix until everything is thoroughly mixed together


Add mixture to a loaf pan and shape into a loaf


Bake for about an hour


After removing from oven, rest for 15 minutes to help prevent falling apart when serving



Final Notes:


After making some meatballs, try adding a second slice of bread to make less dense and meaty.


This recipe has been so liquidy, it might not need the bread to be soaked in milk at all.


We added roasted Sandia peppers to the mixture this time, which added a nice warming sensation without the burning. In the past, we have add mustard to the mixture because that's what my family did growing up.

It'd be fun to try adding different things to make different flavors of meatloaf. Like swapping some of the ground beef with Italian sausage and pureed roasted bell peppers for the ketchup.
