Twice-Baked Sweet Potatoes

Dinner June 5, 2025


Ingredients:

Sweet Potatoes

Kosher Salt

Freshly ground Black Pepper

Butter


Directions:

Preheat oven to 375°F (190°C).


Cut a slit into each sweet potato lengthwise. Place on a foil lined baking sheet cut side down and bake until soft, about one hour and 15 minutes.


Meanwhile, cook any of your fillings that need to be cooked.


Scoop out most of the sweet potato flesh with a spoon, leaving a thin layer on the skin. Add scooped out potato to a mixing bowl.


Mash the potato with butter and season to taste with salt and pepper. Add your other fillings.


Scoop the mash back into the potato skins and reshape back into a potato shape if needed.


Bake again for another 20-30 minutes.





Final Notes:


You can refill all of the potato skins, or only some to create larger, overstuffed potatoes.


Pretty good alternative to The Best Roasted Sweet Potatoes, little less to prepare (at least for the potatoes) and a little faster.

Filling: 1 teaspoon red pepper flakes, 3 garlic cloves, ¼ cup feta cheese, 2 precooked hot Italian sausages, 1lb precooked marinated kale, and topped with red onions
